succotash

My Mother gave me her cast iron skillet which I adore.  She made the best fried chicken in that skillet and knew how much I adored that skillet.  I feel like she is with me when I use it.

It happens to be a permanent fixture atop my stove as if it were on display.  I use it often.  One dish that I love is “Summer Succotash.”  Chopped onion, garlic, corn, lima beans into the skillet and the okra dredged in cornmeal and roasted on a pan in the oven for 25-30 minutes. You then add the cherry tomatoes and the okra to the skillet and fresh herbs, basil and arugula and a splash of apple cider vinegar and you have the best supper.
